Chicken shashlik

The composition of the dish:

Ingredients:
- Chicken - 1 pc.
- Light beer - 1 bottle
- Onions - 2 heads
- Oregano - 1 tsp.
- Black pepper - 1/2 tsp
- Salt

Rinse the chicken. Separate the flesh from the bones and chop it into small pieces, season with salt and pepper, add some oregano. Clean the onion, cut into slices. Put onions and the chicken into light beer and marinate for 10 hours. Push chicken pieces and onion slices alternately on skewers. Grill it until done. Serve with fried potatoes, sprigs of fresh herbs.

Fried meatballs

Ingredients:
- Chicken fillet - 300 g
- Butter - 200 g
- Ham - 20g
- Peeled prawns - 20 g
- Marinated mushrooms - 20 g
- Finely chopped beer's onion - 40 g
- Egg - 1 pc.
- Corn starch - 1 tbsp.
- Sodium glutamate - 1/4 tsp.
- Vegetable oil - 5 tbsp.
- Salt
- Parsley

Mince chicken, add salt, egg, diluted starch and mix well.
Mince ham, mushrooms and prawns, add beer's onion and stir. Add the softened butter, stir until smooth and chill for 30 minutes. Make walnut size balls from the mixture.
Make small cakes from chicken mince, put butter balls on them and roll this in the form of meatballs. Fry the meatballs in a preheated 180°C oil until tender.
Serve with greens and vegetables.

Devilled chicken

Ingredients:
- Chicken - 2 pieces.
- Garlic - 4-6 cloves
- Apple cider vinegar or wine vinegar - 3-4 tbsp.
- Run butter - 100 g
- Tomatoes - 2 pcs.
- Cucumbers - 2 pcs.
- Ground red pepper - 1 tsp.
- Coriander - 1 tsp.
- Salt

Directions:

Cut chickens the sternum, spread and slightly repel so as not to crush bones. Then add salt to taste, sprinkle with vinegar and marinate for 1 hour. For seasoning rub the garlic, mix with pepper, coriander and salt, add 1 teaspoon of vinegar. Brush the chicken with this seasoning well inside and out. Roast the chicken with hot oil in a special pan - first from the inside with a press, then from the outside without press. - Mayonnaise - 4 tbsp.
- Parsley - 1 bunch
- Oyster mushrooms - 200 g
- Cheese, coarsely grated - 4 tbsp.
- Ground black pepper
- Salt

Wash legs, dry, remove the bones, put the flesh skin-down down and tenderize so that the skin remains intact. Grate carrots, chop the garlic and parsley. Scald mushrooms, cut into strips. Salt the flesh, cover with garlic at an even layer, spread a part of mayonnaise, pepper, evenly put carrots, cheese, mushrooms, put parsley on the narrow edge of the leg. Roll it all, starting from this side. Tie thread rolls, brush with remaining mayonnaise and bake in oven for 40 minutes until golden brown. Remove the ties when serving, cut rolls into slices. For garnish fits boiled cauliflower and broccoli.

Chickens with golden eggs

Ingredients:
- Chicken - 2 pcs.
- Lemon - 2 pcs.
- Grounded ginger - 1 tsp.
- Run butter - 2 tsp.
- Vegetable oil - 6 tbsp.
- Onions - 8 pcs.
- Garlic - 2 cloves
- Chicken stock cubes - per 200 ml of stock
- Saffron - 1/4 tsp.
- Grounded cloves - 1/2 tsp.
- Egg - 4 pcs.
- Black pepper, salt

Clean and wash chickens, dry, season with salt inside and out. Put half a lemon inside the chicken, sprinkle with black pepper, half the rate of ginger, cloves, sew up the abdomen. Heat the run butter and 3 tablespoons of vegetable oil, fry the chicken on all sides and put them to another bowl. Clean and chop finely onions and garlic, saute in the oil remaining after roasting the chicken, add stock, salt, put the chicken back. Squeeze juice of one lemon. Beat up saffron, ginger and remaining vegetable oil, gradually adding the lemon juice. Pour over the chicken and stew covered over low heat for 25-30 minutes. Boil hard boiled eggs. Shell, put in a roasting pan with the chicken 10 minutes before ready. When serving pour the chicken sauce, remaining after the fire, decorate with eggs. Serve on rice.

Chicken breast in almond crust

- Chicken fillet, 4 pcs.
- Potato chips - 100 g
- Almonds, finely chopped - 50 g
- Egg - 1 pc.
- Wheat flour - 2 tbsp.
- Yellow bell pepper - 1 pod
- Tomatoes - 4 pcs.
- Cucumbers - 1 pc.
- Lettuce - 200 g
- Vinegar 3% - 2 tbsp.
- Vegetable oil - 4 tbsp.
- Sugar - 1 tsp.
- Ground black pepper
- Salt

Tenderize the chicken fillet, salt and pepper it.
Crush potato chips and mix with almonds. Beat up the egg.
Bread chicken breasts with flour, dip into the egg, bread with a mixture of almonds and potato chips. Place on parchment covered baking sheet and roast in the oven for 20 minutes.
Cut peppers in halves, remove seeds, cut into strips. Slice tomatoes and cucumbers. Mix vegetables, add finely shredded lettuce.
Mix vinegar with salt, pepper, sugar. Add oil while beating up. Pour the mixture onto the salad.
Garnish the chicken with salad when serving.

Chicken soup with zucchini

The composition of the dish:

Ingredients:
- Chicken stock - 5 cups
- Cooked chicken fillet - 200 g
- Zucchini - 1 pc.
- Asparagus - 200 g
- Carrots - 1 pc.
- Onions - 1 pc.
- Vegetable oil - 6 tbsp.
- Celery - 1 pc.
- Black pepper, salt to taste

Cut zucchini, carrots and celery into slices, cut onion, asparagus and fillet into small pieces. Mix onions and carrots, saute it with oil.
Bring broth to boil, add vegetables, salt, pepper, and boil for 25 minutes.
When serving, place slices of fillet on a plate, fill them with soup and sprinkle with chopped herbs.

Chakhokhbili Chicken

The composition of the dish:

Ingredients:
- 1 chicken - 1.2 kg (chicken can be replaced by a similar number of thighs)
- Tomatoes - 3 pcs.
- Onions - 2 pcs.
- Cilantro (or parsley) - one batch
- Basil - one batch
- Khmeli suneli - 1 tsp
- Small red pepper 1 pc.
- Salt to taste
- Garlic - 3-4 cloves
- Butter

Cut chicken into small pieces of about equal size, wash, dry with paper towels. Fry in a dry frying pan for 15 minutes, turning constantly, until golden brown. Reduce the heat.
Slit tomatoes skin crosswise, pour over boiling water, dip into cold water and remove the skins. Cut into small cubes, add to chicken. Stew for 10 minutes.
Cut onions into half rings and fry with butter until golden brown.
Add to the pan, stew covered for 30 more minutes. At the end add the finely chopped garlic, herbs, salt and spices, stir and stew for 7 more minutes.
Serve with rice or mashed potatoes.

Chicken liver salad

Ingredients:
- Chicken Liver - 200 g
- Carrots - 1-2 pcs.
- Onions - 1 pc.
- Bulgarian pepper - 1 pc.
- Salt
- Pepper

Directions:
Wash, dry and chop the liver.
Cut jnions cut into half rings, slice carrots into strips.
Wash peppers, remove the seed box and cut into half rings.
Fry the liver In the heated vegetable oil in a frying pan for 3-5 minutes.
Add chopped vegetables, salt and pepper and cook until tender for 8-10 minutes stirring occasionally.

Salad served warm.

Tender cutlets of chicken hearts

- Chicken hearts - 0.5 kg
- Salt and pepper
- Stale white bread - 2 slices
- Onion - 1 pc.
- Mayonnaise - 3 tbsp.
- Flour - 2 tbsp.
- Egg - 1 pc.


Mince hearts, onions and soaked in water (milk or cream) bread, add the eggs, mayonnaise, flour, salt and pepper. Put patties in a hot pan with oil wit a spoon to spread. Fry until golden brown. If the cutlets are not ready in 5 minutes put them into the oven.
Obtained cutlets are very tender and juicy.

Chicken leg stuffed with mushrooms and cabbage

The composition of the dish:

Ingredients:
- Chicken legs - 4 pcs.
- Mushrooms - 400 g
- Cabbage - 60 g
- Ham - 50g
- Cheese - 80 g
- Onions - 1 pc.
- Egg - 1 pc.
- Butter - 4 tbsp.
- Wheat flour - 2 tbsp.
- Salt

Skin the legs in form of "stocking", remove the flesh and chop it well.
To make the stuffing shred cabbage and fry it in butter with finely chopped mushrooms, ham, chicken flesh and onion, chill, then add some grated cheese.
Stuff the leg skin with the mixture, give it the shape of a whole leg, fix with a skewer, cover with a beaten egg, bread with flour and bake in the oven for 20-25 minutes.
Garnish with fresh or pickled vegetables.

2 chicken breasts

2 or 3 large carrots

3 boiled eggs

1 small onion salt, pepper, herb seasoning and appe vinegar

Method of cooking:

Boil chicken and carrots in salted water (add pepper and bay leaf). Do not pour the broth away (you'll need it later). Slice the onion finely, pour apple vinegar over it, and let it soak for 5 to 10 minutes. Blend the chicken breasts and carrots in a blender or a mincing machine. Drain the onion form vinegar and grate the eggs on a coarse grater. Combine ingredients, add the broth, and mix everything until you get a pâté texture. Add herb seasoning and pepper (optionally). Spread over bread or crispbreads.
